
Marc is the owner of the multi award winning Niche Restaurants in London. Niche Rosebery Avenue was London’s very first 100% gluten-free restaurant. Marc is also the founder of Special Dietary Meals which owns Libero Special Meals and Cub Food free-from food for kids. Supplying airline and the travel industry with special dietary and allergen guaranteed meals globally through Foodcase International as their Global Special Meals Program Director.

Diana joined the ASF in early 2024 to lead Commercial and Strategy, working with the team building products and services to offer to airlines and caterers for auditing and reducing Cabin Waste. From Jan 2025, Diana took on the role of CEO. Her background is in leading marketing and communication consultancies working with clients to help with their brand and marketing strategies. Diana has worked internationally across Europe, including UK and German, and Asia in China, Korea and Hong Kong.

Simon is a recognised change maker with 30+ years’ experience across airlines and hospitality on four continents. His career spans hotels to senior airline roles, shaping strategy, spotting trends, and driving innovation that elevates customer and employee experiences. Member of the IFSA Foundation Board and judge for the Onboard Hospitality Awards, he has also served on the IFSA Executive and WTCE Advisory Boards. Today, Simon works as an independent consultant.

With over 20 years of experience as an F&B foodservice buyer—including 14 years dedicated to the travel sector—Heerum brings deep industry insight and a passion for educating and empowering suppliers on all aspects of travel.

With over 30 years in the food industry - Zoe started her career as a chef for the Royal Household. Zoe is passionate about all aspects of foodservice and delivery and has deep industry understanding. She is particularly dedicated to working with suppliers to develop and coach them opening up new opportunities both for suppliers and buyers across the food industry.

With over 30 years of experience, covering operations, NPD, supply chain and procurement in the UK, Middle East, Australia and Hong Kong. Working across retail (and retail on board) and airlines particularly Qatar Airways, Tigerair in Australia and LSG/Gate Group. Recently worked for Aura Hospitality in Qatar, getting them operationally ready for the World Cup in 2022, and more recently Fever Tree in the UK.
